Roru Baru welcomed chefs Joey Chan and Diego Zarco from Delia, Bangkok’s popular modern Mexican spot founded by Gabriela Espinosa 👨‍🍳
Seats fully sold out the moment bookings opened! The venue was packed with excitement all weekend—from a relaxed, cozy Friday night to an epic, high-energy Saturday night with tunes spun by DJ Mike Wolf 🎵🎧🌙

A Fresh Take on Nagano’s Flavors 🍃

The exclusive tasting menu was full of surprises from starters to dessert! 😲🌈
What really stole the show was how these world-class chefs used their creativity to transform Nagano’s local ingredients into modern masterpieces.

・ A Touch of Shinshu Apple! "Wagyu Asada Taco" 🌮🔥(Refried beans / Charred scallion salsa)
Nagano Ingredient Used: Miso-maker’s Yakiniku Sauce with Shinshu Apple 🍎🤎
The juicy, grilled Wagyu beef was paired with a local "Yakiniku (BBQ) sauce" packed with the rich umami of Shinshu miso and the crisp sweetness of Shinshu apples! ✨
It was a perfect marriage of traditional Mexican taco vibes and Nagano’s authentic fermentation craft. Guests couldn't help but yell "Delicious!" from the very first bite. 💖

 ・ A Match Made in Flavor Heaven: "Maitake Tostada" 🍄🥑(Roasted cauliflower cream / Salsa macha)
Nagano Ingredient Used: Walnut Miso 🥜🤎
The crispy, fragrant grilled Maitake mushroom tostada featured a star ingredient: Nagano's traditional "Walnut Miso." 🌟
The creamy cauliflower sauce and the sweet, nutty richness of the walnut miso perfectly balanced the spicy kick of the salsa macha. 
It was incredible to see how a classic local ingredient could take on a whole new, global personality. 👏
