This is a Junmai Daiginjo sake made with Miyama Nishiki rice from Nagano Prefecture, polished to 49%, and using yeast strain Kyokai No.1801.
Valuing what only a small brewery can achieve, all brewing processes—from rice preparation to pressing—are performed by hand.
It possesses a gorgeous Ginjo aroma along with a smooth, sweet palate. The balance of sweetness and acidity is perfected around 15°C. It is recommended to enjoy its gorgeousness in a large glass, such as a wine glass.
